The pluses of Pepper series:

  • SHOCK FREEZING

It is possible to select two shock freezing cycles, soft or hard, depending on the product that needs to reach -18°C at the core.

At the end of each cycle, the automatic product conservation at -25°C is set.

  • BLAST CHILLING

Two blast chilling modalities to select obtaining a cycle that can be more delicate or intense, in order to achieve the desired result. From a temperature of +90°C, in 90 minutes it is possible to reach +3°C at the product’s core, preserving all food organoleptic characterises.

Each cycle ends with the automatic conservation of the product at +2°C.

  • THAWING

A new added value: a thawing cycle, with controlled temperature, in order to preserve food organoleptic properties is available on the touch interface.

  • CUSTOM RECIPE BOOK

A dedicated icon to give space to your creativity, introducing your personalized recipes, saving and storing your favourite and most used cycles.

  • APPLICATIONS
